This is an absolute crowd pleaser!    Enjoy!

Chilli Chicken Thighs with Salsa


Makes 4 servings

Ingredients: (for chicken)

    8 boneless chicken thighs
    1/2 Lemon Juice
    1/2 teaspoon bottled crushed chile (sambal oelek)
    2 tablespoon oil (vegetable will do)
    2 teaspoons sesame oil
    2 tablespoons soya sauce
    2 tablespoons honey
    1 clove garlic, crushed
    2 green onions chopped
    2 tablespoons finely chopped cilantro
    Salt to taste

Ingredients: (for salsa)

   1 small cucumber, chopped
   1 small red onion, finely chopped
   1 medium tomato, chopped
   2 tablespoons olive oil
   1 tablespoon white wine vinegar
   1/4 teaspoon superfine sugar
   1/4 cup cilantro leaves

 
Preparation:

1.  Wash and trim chicken of excess fat

2. Combine the juice, chile, oils, soy sauce, honey, garlic, green onions, cilantro and salt in a large bowl and mix well.

3. Add chicken and stir to combine. Cover with plastic wrap. Refrigerate for 3 hours or overnight, stirring occasionally.

4. Drain chicken and reserve the marinade. Place chicken on lightly oiled grill. Cook over medium heat for 5 minutes each side or until tender and cooked through. Brush with the reserved marinade in the last minutes of cooking. Serve hot with Salsa.

5. To make Salsa: Just put it in a bowl and mix it up!
